Method
- Slice the onion into thick rings.
- Place one large onion ring in a preheated mini waffle maker and cook until softened, about 5–7 minutes.
- Remove the softened onion ring, add a layer of shredded cheddar cheese to the waffle maker, place the onion ring back on top, add more shredded cheddar cheese, and cook until crispy and there is no resistance when lifting the waffle maker.
- Form the ground beef into patties and season with salt, pepper, garlic powder, and a dash of mustard.
- Spray or drizzle olive oil in a skillet and heat over medium-high. Add the patties and cook until browned and cooked to your preference, about 4–5 minutes per side.
- During the last minute of cooking, place a slice of American cheese on each patty and let it melt.
- In a small bowl, mix mayonnaise, ketchup, mustard, and sugar-free relish. Adjust to taste.
- Start with one onion chaffle, add a beef patty with melted American cheese, drizzle with sauce, add another beef patty, drizzle with more sauce, and top with the second onion chaffle.
- Serve immediately while the patties are hot, the cheese is melted, and the onion chaffles are crispy.
