Crockpot Broccoli Cheddar Soup

A rich and creamy slow cooker broccoli cheddar soup made with simple ingredients and loaded with cheesy flavor.

Ingredients
  

  • 4 cups broccoli florets
  • 1 small yellow onion, diced
  • 1/2 bag shredded carrots
  • 3 cups chicken broth
  • 1 cup chicken broth
  • 1/4 cup cornstarch
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika (optional)
  • 1 cup heavy cream or half-and-half
  • 2 cups shredded sharp cheddar cheese
  • 8 oz cream cheese

Method
 

  1. Add broccoli, onion, and carrots to the crockpot.
  2. Pour in 3 cups of chicken broth.
  3. Whisk together 1 cup chicken broth and cornstarch until smooth.
  4. Pour slurry into the crockpot.
  5. Add garlic powder, salt, pepper, and paprika and mix.
  6. Cook on HIGH for 3 hours until broccoli is tender.
  7. Add cream cheese and stir until melted.
  8. Add heavy cream and stir to combine.
  9. Add cheddar cheese and stir until melted and creamy.
  10. Serve hot.
