Creamy Cajun Chicken Pasta

Tender Cajun chicken, peppers, and penne pasta tossed in a rich creamy parmesan sauce.

Ingredients
  

  • 2-3 chicken breasts, cut into bite-sized pieces
  • 12 oz penne pasta
  • 2 tbsp olive oil
  • 2 cups heavy cream
  • 1 cup chicken broth
  • 1 1/2 cups shredded parmesan cheese
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small onion, sliced
  • 4 cloves garlic, minced
  • Cajun seasoning
  • garlic powder
  • onion powder
  • salt and pepper
  • fresh parsley

Method
 

  1. Boil penne pasta until al dente and drain.
  2. Season chicken with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
  3. Cook chicken in olive oil until browned and fully cooked.
  4. Add onions, peppers, and garlic and cook until softened.
  5. Pour in chicken broth and heavy cream.
  6. Stir in parmesan cheese until smooth and creamy.
  7. Mix in cooked pasta and simmer briefly.
  8. Garnish with parsley and extra parmesan before serving.
