Chicken Fajita Quesadillas

Crispy flour tortillas filled with juicy fajita chicken thighs, bell peppers, onions, and melted Mexican blend cheese.

Ingredients
  

  • 1 1/2 lbs boneless skinless chicken thighs, cut into cubes
  • 1 red bell pepper, sliced
  • 2 orange bell peppers, sliced
  • 1 onion, sliced
  • 2 tbsp olive oil, for cooking chicken
  • extra oil, for cooking quesadillas
  • 1 packet fajita seasoning
  • 1 tbsp Lawry’s Carne Asada seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • salt and pepper, to taste
  • 1/2 lemon, juiced
  • 4 large flour tortillas
  • 2 cups shredded Mexican blend cheese

Method
 

  1. In a bowl, season cubed chicken thighs with fajita seasoning, Carne Asada seasoning, garlic powder, onion powder, salt, pepper, and lemon juice. Toss to coat.
  2. Heat 2 tbsp olive oil in a skillet over medium heat. Add the seasoned chicken and cook until almost cooked through.
  3. Add sliced onion, red bell pepper, and orange bell peppers. Cook until the chicken is fully cooked and the vegetables are tender.
  4. Heat a little oil in a skillet. Add a tortilla, sprinkle cheese over the whole tortilla, then spoon chicken and peppers onto one half. Fold the tortilla over.
  5. Cook for 2–3 minutes per side until golden brown and the cheese is melted.
  6. Slice and serve with salsa, sour cream, or guacamole.
