Chicken Bacon Ranch Potato Casserole

A hearty baked casserole made with seasoned chicken, potatoes, ranch seasoning, cheddar cheese, and crispy bacon.

Ingredients
  

  • 2 lbs boneless skinless chicken breasts, cut into 1-inch cubes
  • 2 lbs baby potatoes, halved
  • 2 tbsp avocado oil
  • 1 1 oz packet ranch seasoning mix
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp black pepper
  • 1 tbsp Kinders Caramelized Onion Butter Burger Seasoning
  • 2 cups shredded cheddar cheese
  • 8 slices bacon, cooked and crumbled
  • chopped parsley for garnish

Method
 

  1. Preheat your oven to 385°F and lightly grease a 9x13-inch casserole dish.
  2. In a large bowl, combine the cubed chicken and potatoes. Drizzle with avocado oil, then season with ranch seasoning, garlic powder, onion powder, black pepper, and Kinders Caramelized Onion Butter Burger Seasoning. Toss until everything is evenly coated.
  3. Transfer the seasoned chicken and potato mixture to the prepared casserole dish and spread it into an even layer.
  4. Bake uncovered for 45 minutes, or until the chicken is cooked through and the potatoes are fork tender.
  5. Remove the casserole from the oven and sprinkle shredded cheddar cheese and crumbled bacon evenly over the top.
  6. Return the casserole to the oven and bake for 10 more minutes, or until the cheese is melted and bubbly.
  7. Garnish with chopped parsley, if desired, and serve warm.
