Cabbage Roll Soup

A hearty cabbage roll soup made with Italian sausage, chopped cabbage, tomato sauce, beef broth, instant rice, dill, seasonings, and sour cream for serving.

Ingredients
  

  • 2 lbs Italian sausage
  • 1 medium onion, diced
  • 1 tbsp minced garlic
  • 1 small head cabbage, chopped
  • 1 29 oz can tomato sauce
  • 4 cups beef broth
  • 1 cup instant rice
  • 1 tsp garlic salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp Kinder's Buttery Garlic & Herb Seasoning
  • 1 tsp dried dill
  • sour cream, for serving

Method
 

  1. Heat a large Dutch oven or soup pot over medium-high heat. Add the Italian sausage and cook until browned, breaking it into crumbles as it cooks.
  2. Add the diced onion and cook for 3 to 4 minutes, until softened. Stir in the minced garlic and cook for 30 seconds, until fragrant.
  3. Add the chopped cabbage and pour in the tomato sauce. Stir everything together until the cabbage is coated in the sauce.
  4. Season with garlic salt, black pepper, garlic powder, onion powder, Kinder's Buttery Garlic & Herb Seasoning, and dried dill.
  5. Pour in the beef broth and stir until well combined. Cover the pot and cook over medium-high heat for 45 minutes to 1 hour, stirring occasionally, until the cabbage is tender.
  6. Stir in the instant rice, cover, and cook for an additional 10 minutes, until the rice is tender.
  7. Give the soup one final stir, then ladle into bowls. Top each serving with a dollop of sour cream and enjoy.
